Bell Pepper Salad

  • 3 Bell Peppers – I used yellow and aloha (orange and red are great too)

  • 4 ounces of hard cheese such as a sharp cheddar ~ I  used a garlic and herb raw milk cheddar
  • Cauliflower- I used 1/4 to a 1/2 a head
  • 1/2 red sweet onion
  • 1/3 cup Artisanal Maple Vinegar
  • 1/3 cup olive oil
  • Profumo del Vermont from Trenchers Farmhouse – your favorite spice blend will work – this happens to be mine 🙂

Chop veggies into bite size pieces.  Add maple vinegar and olive oil. Mix well. Sprinkle with spices and mix again. Let set long enough for veggies to soak in the flavors.

I served this with pork roast and brown rice.  When putting away the leftovers I tossed the pepper salad in with the brown rice to eat the next day. I think the leftovers were almost better then the original! 😋
