Ingredients for Finnish Pancake or Pannukakka

  • 4 large eggs
  • 2 cups whole milk
  • 1 cup all-purpose flour
  • 2 tablespoons maple sugar
  • ¼ cup (4 tablespoons) unsalted butter
  • 1 teaspoon vanilla extract
  • A pinch of salt 


Step-by-Step Instructions

  • Preheat and Prep the Pan: Preheat your oven to 400°F (200°C). Place the ¼ cup of butter directly into an 8×11-inch or 9×13-inch baking dish. Put the dish into the heating oven for a few minutes until the butter is completely melted, sizzling, and hot.
  • Whisk the Wet Ingredients: In a large bowl, vigorously whisk together the eggs, maple sugar, and milk until the mixture is highly frothy and light.
  • Incorporate the Dry Ingredients: Gradually add the flour, vanilla extract, and salt into the egg mixture. Whisk thoroughly for 1 to 2 minutes until you achieve a completely smooth, runny batter without lumps.
